Equipment

  • Skillet

Ingredients

For the Sauce:

  • 1 teaspoon honey
  • 1/4 cup fat-free Greek yogurt
  • 3 tablespoons light mayonnaise
  • 1 tablespoon freshly squeezed lime juice
  • 3/4 teaspoon chili-lime seasoning
  • 1/8 teaspoon kosher salt
  • 1-2 tablespoons water

For the Fish:

  • 4 fillets 4 oz each, skinless, firm white fish like cod
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 3/4 teaspoon chili-lime seasoning
  • 1/2 teaspoon ground cumin

For the Slaw:

  • 1 tablespoon fresh lime juice
  • 1 cup shredded white cabbage
  • 1 cup shredded red cabbage
  • 1/4 cup chopped cilantro
  • 1/4 cup shredded carrots
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon extra virgin olive oil

For the Tortillas:

  • 8 corn tortillas charred over an open flame for 30 seconds on each side
  • Lime wedges

Instructions

Step 1: Prepare the Sauce

  • In a medium bowl, combine the honey, Greek yogurt, light mayonnaise, lime juice, chili-lime seasoning, and salt. Whisk everything together until it’s smooth.
  • If the sauce is too thick, a spoonful of water will help achieve your desired consistency. The sauce should be creamy yet drizzle-able.

Step 2: Season the Fish

  • In another bowl, mix the smoked paprika, salt, chili-lime seasoning, and cumin. Rub this flavor-packed mixture evenly over the cod fillets. This is where the magic happens—the spices elevate the fish beyond the ordinary.

Step 3: Cook the Fish

  • Heat a skillet over medium-high heat. Add a splash of olive oil. Once hot, place the fillets in the skillet. Cook for about 3-4 minutes on each side or until the fish flakes easily with a fork. The aroma wafting through your kitchen will be heavenly!

Step 4: Make the Slaw

  • In a large bowl, combine the shredded white and red cabbage, carrots, cilantro, lime juice, olive oil, salt, and pepper. Toss everything together to ensure a beautiful mix of colors and flavors. This slaw adds crunch and a punch of freshness to each taco.

Step 5: Warm the Tortillas

  • When the fish is nearly ready, it’s time to warm those tortillas. I love charring them over an open flame; just 30 seconds on each side gives them an unbeatable flavor. If you don’t have an open flame, a hot skillet works as well.

Step 6: Assemble Your Tacos

  • Now comes the fun part! Take a warm tortilla and place a generous piece of the cooked cod on top. Add a scoop of the vibrant slaw and drizzle on that irresistible sauce. A squeeze of fresh lime brings everything together, adding that final touch of brightness.

Step 7: Serve and Enjoy

  • Plate up those gorgeous tacos! Gather your friends or family and share this tasty dish. I guarantee smiles all around!

Notes

  • Cod: This fish is not just tasty; it's rich in protein and omega-3 fatty acids. Great for heart health!
  • Greek Yogurt: A nutritious alternative to sour cream. It adds creaminess while packing in protein.
  • Cabbage: A fiber-rich food that promotes digestive health. Plus, it’s a great way to incorporate more veggies into your meal.
  • Olive Oil: Known for its heart-healthy properties, it brings richness to the slaw.
