Ingredients
  

  • 1/2 cup gluten-free rolled oats
  • 1 tsp chia seeds
  • 1/2 scoop vanilla-flavored protein powder
  • 1/2 cup unsweetened almond beverage
  • 2 tsp fresh lemon juice
  • 1/8 tsp lemon zest
  • 1 tbsp pure maple syrup
  • 1/3 cup plain Greek-style yogurt
  • 1 1/2 tbsp cream cheese
  • 2 tbsp white chocolate morsels
  • 1/2 tsp ground cinnamon
  • 1 tbsp toasted coconut flakes

Instructions
 

  • Start by gathering all your ingredients together. You don't want to be searching for something once you’re in creation mode. Keeping everything organized makes the process smoother.
  • In a medium bowl, combine the rolled oats, chia seeds, protein powder, and ground cinnamon. Mix well. This step prepares the foundation for your oats.
  • Now, add the almond beverage, fresh lemon juice, maple syrup, Greek yogurt, and cream cheese. Stir vigorously until everything is well combined. You want a smooth mixture, without lumps of cream cheese.
  • Taste your mixture. This is your chance! Adjust sweetness by adding a bit more maple syrup if desired. If you want a stronger lemon flavor, throw in a touch more lemon juice or zest.
  • Divide the mixture evenly into your storage jars. I love using mason jars for this purpose. They seal well and make it easy to transport if you’re on the go.
  • Cover the jars with lids or plastic wrap and place them in the fridge. Let them chill overnight. This step allows the oats to soak up the flavors and soften.
  • In the morning, top your oats with white chocolate morsels and toasted coconut flakes. If you like, add some fresh berries or nuts for a touch of color and crunch.

  • Experiment with Sweetness: Taste the mixture before refrigerating. Adjust maple syrup according to your preference.
  • Use Fresh Lemon: Always prefer fresh lemon juice and zest for the best flavor. Bottled lemon juice can’t compete.
  • Don’t Skip the Chia Seeds: They not only enhance nutrition but also help thicken the oats.
  • Check Consistency Before Serving: If the oats seem too thick in the morning, stir in additional almond milk to lighten them up.
  • Make a Batch: These oats keep well in the fridge for about 4 days. Perfect for meal prep!
