Ingredients
  

  • 1 ¼ cup unsweetened almond milk or milk of your choice
  • ½ cup plain or vanilla Greek yogurt*
  • 2 tablespoons freshly squeezed lemon juice
  • Zest from 1 medium lemon
  • 1 to 2 tablespoons pure maple syrup adjusted to your preference**
  • ¼ teaspoon vanilla essence
  • ¼ teaspoon almond essence
  • 1 cup old-fashioned rolled oats
  • 1 tablespoon chia seeds
  • ½ cup fresh or frozen blueberries frozen will create a delightful purple hue!
  • 1 tablespoon finely chopped walnuts
  • 1 teaspoon honey
  • Blueberry compote optional for layering
  • Lemon zest
  • Additional blueberries
  • Your favorite granola

  • In a mixing bowl, start by adding the almond milk and Greek yogurt. The yogurt brings a creaminess that’s irresistible. Next, squeeze in the fresh lemon juice and add the zest. This is where the flavor magic happens. Toss in maple syrup, vanilla essence, and almond essence. Stir well until everything is nicely combined.
  • Once your wet ingredients are ready, it’s time to introduce the dry ingredients. Pour in the old-fashioned rolled oats and chia seeds. The chia seeds are a powerhouse of nutrients and contribute to the creamy consistency. Mix everything until the oats are fully coated in the wet mixture.
  • Gently fold in the blueberries, whether fresh or frozen. If using frozen, don’t worry—this will create a fun purple hue as they thaw overnight. Be careful not to mash them; you want to retain those beautiful berry pieces for texture.
  • Divide the mixture into jars or containers with lids. This part is crucial: cover the jars tightly and place them in the refrigerator. Allow these oats to soak overnight. The oats will absorb the liquid and transform into a creamy delight by morning.
  • In the morning, take them out of the fridge and give them a good stir. Top with chopped walnuts, honey, lemon zest, and any additional toppings you fancy, such as more blueberries or granola. Dig in!

Notes

  • Experiment with Sweetness: Adjust the maple syrup according to your taste. You can always add more later if needed.
  • Make a Big Batch: These oats can last in the fridge for about five days, so consider making a week’s worth on Sunday.
