- 15 oz can of black beans undrained
- ½ cup water or more as needed
- 1 bay leaf
- 2 teaspoons extra virgin olive oil
- ½ medium onion finely chopped
- 2 garlic cloves minced
- 2 scallions chopped
- 2 tablespoons diced red bell pepper
- 3 tablespoons chopped fresh cilantro
- A few pinches of ground cumin to taste
- Pinch of dried oregano
- 1 teaspoon red wine vinegar
- Sea salt and freshly cracked black pepper to taste
- 1 tablespoon lime juice
- 1 teaspoon smoked paprika
Step 1: Prepare Your Ingredients
Begin by gathering all the ingredients. Chop your onion, garlic, scallions, and red bell pepper. Set them aside. Having everything prepped will make the cooking process smooth.
Step 2: Sauté the Aromatics
In a medium saucepan, heat the extra virgin olive oil over medium heat. Once the oil is warm, add the chopped onion. Sauté for about 3-4 minutes until it starts to soften. The aroma of onions cooking will fill your kitchen.
Next, add the minced garlic and cook for an additional minute. You want the garlic fragrant but not browned—stay on guard!
Step 4: Introduce the Beans and Spices
Step 5: Season and Simmer
Let your mixture cook for about 15-20 minutes. Stir occasionally, and if it becomes too thick, add more water. Once it simmers, remove the bay leaf and add the red wine vinegar, lime juice, smoked paprika, salt, and pepper. Taste as you go. You may want a pinch more of this or that!
Step 7: Serve
Serve your Easy Cuban Style Black Beans hot. They can be enjoyed with rice, tortillas, or even by themselves. Don’t forget to take a moment and appreciate the vibrant colors and aromas as you set the table!
To elevate your cooking experience, here are some helpful tips:
- Use Fresh Beans: If you prefer, soak and cook dried black beans instead of canned. This adds an extra layer of flavor.
- Add Heat: For those who like it spicy, consider adding a diced jalapeño or a pinch of cayenne pepper.
- Herb Alternatives: Swap fresh cilantro with parsley if you’re not a fan. Both herbs work well.
- Sweetness: A touch of brown sugar can balance out the heat and acidity effectively.
Storage Tip: If you're making a larger batch, freeze leftovers in small containers for convenient meals later.
