  • 4 cups cubed day-old bread
  • 2 cloves garlic peeled and smashed

  • ¾ cup creamy mayonnaise
  • 5 anchovy fillets finely minced

Step 1: Prepare the Croutons

  • Start by preheating your oven to 375°F (190°C). Cube your day-old bread into bite-sized pieces. Toss them in a bowl with smashed garlic and Parmesan cheese.
  • Drizzle a little olive oil on top and mix well. Spread them out evenly on a baking sheet. Bake for about 15 minutes or until golden brown and crispy. Give them a toss halfway through for even browning.

Step 2: Make the Caesar Dressing

  • While the croutons are baking, let’s make the magic happen! In a medium mixing bowl, combine the minced garlic and anchovy fillets. Use a fork to mash them into a paste. Add the mayonnaise, lemon juice, Dijon mustard, and Worcestershire sauce.
  • Whisk until it’s all well combined. Gradually drizzle in the olive oil to create that creamy texture. Finally, mix in 2 tablespoons of Parmesan cheese, and season with salt and pepper to taste.

Step 3: Assemble the Salad

  • In a large salad bowl, toss the torn romaine lettuce with the prepared dressing. Use enough to coat the lettuce without drowning it. Sprinkle the remaining Parmesan cheese on top and add the croutons.
  • For those who like a bit of spice, a sprinkle of red pepper flakes adds a nice kick. Toss everything gently to combine and serve immediately.
