Equipment

  • large saucepan

Ingredients

  • 1 cup unsalted butter for richness
  • 1 cup heavy cream for a creamy texture
  • ½ teaspoon sea salt or to taste
  • ¼ teaspoon freshly ground white pepper or to taste
  • 1 ½ cups freshly grated Parmesan cheese avoid powdered Parmesan for the best flavor
  • 1 teaspoon garlic powder optional, for extra depth of flavor
  • 1 tablespoon fresh parsley optional, for a touch of freshness and color.

Instructions

  • Start by boiling a large pot of salted water. Add your fettuccine pasta, and cook it according to the package instructions until al dente. Make sure to reserve about a cup of the pasta water before draining. This water can be handy for adjusting the sauce's consistency later on.
  • While your pasta is cooking, grab a large saucepan. Melt the unsalted butter over medium heat. Once it's fully melted and slightly bubbling, add the heavy cream. Stir them together, and bring the mixture to a gentle simmer.
  • Next, add the freshly grated Parmesan cheese to the sauce. Whisk continuously until it melts fully and the sauce is smooth and creamy. Feel free to include the garlic powder at this stage for extra depth. Season the mixture with sea salt and white pepper to taste.
  • Once the pasta is cooked and drained, add it to the sauce. Toss the fettuccine in the creamy concoction, ensuring every strand is coated with that luscious sauce. If the sauce feels too thick, add a splash of reserved pasta water and stir until you achieve the desired consistency.
  • Finally, plate the pasta. A generous sprinkle of fresh parsley not only adds color but also contributes a fresh note to the dish. Serve immediately and enjoy your homemade Carrabba's Alfredo!

Notes

  • Use quality ingredients: Freshly grated Parmesan and high-quality butter make a significant difference in flavor.
  • Don’t overcook the pasta: Al dente pasta clings better to sauces and enhances the dish's texture.
  • Adjust the creaminess: Don’t hesitate to add a splash of pasta water if the sauce is too thick. It's the secret weapon to achieving the perfect consistency.
  • Consider adding proteins: Grilled chicken or shrimp pair exceptionally well with the Alfredo. Add them for a complete meal!
  • Garnish wisely: Fresh parsley not only adds color but enhances the overall presentation of your dish.
