  • 2 large egg whites
  • 4 ounces part-skim mozzarella cheese
  • ½ cup seasoned Italian breadcrumbs
  • 1 tablespoon olive oil
  • ¼ teaspoon freshly ground black pepper
  • ½ cup high-quality marinara sauce
  • 1 teaspoon red pepper flakes
  • 2 boneless skinless chicken breasts (approximately 12 ounces each)
  • ¼ cup freshly grated Parmigiano-Reggiano cheese
  • ¼ teaspoon garlic powder
  • Fresh basil finely sliced or chopped
  • ¼ cup whole wheat Panko crumbs
  • For serving: Whole wheat spaghetti zucchini noodles, or enjoy the chicken.

Instructions
 

Step 1: Preheat Your Oven

  • Start by preheating your oven to 400°F (200°C). This allows your chicken to cook evenly and melt the cheese perfectly.

Step 2: Prepare the Chicken

  • Pat the chicken breasts dry using paper towels. This helps the coating stick better and ensures a crispy exterior.

Step 3: Create the Coating Mixture

  • In a bowl, whisk together the egg whites, black pepper, and garlic powder. In another dish, combine the seasoned breadcrumbs with the whole wheat Panko crumbs.

Step 4: Coat the Chicken

  • Dip each chicken breast into the egg mixture, allowing excess to drip off. Then, coat each side with the breadcrumb mixture, pressing slightly to ensure an even layer sticks.

Step 5: Arrange on a Baking Sheet

  • Lightly grease a baking sheet with olive oil. Place the coated chicken breasts onto the sheet.

Step 6: Bake

  • Bake for about 20 minutes. At this point, the chicken should be almost cooked through.

Step 7: Add the Sauce and Cheese

  • Remove from the oven and spoon marinara sauce over each chicken breast. Sprinkle with mozzarella and Parmigiano-Reggiano. Return to the oven and bake for an additional 10-12 minutes until the cheese bubbles and is golden.

Step 8: Serve

  • Garnish with fresh basil for a splash of color. Serve this alongside whole wheat spaghetti or zucchini noodles, and enjoy!
