Step 1: Marinate the Beef
In a medium-sized mixing bowl, toss the ribeye steak cubes with tamari, thick hoisin sauce, sweet soy sauce, black pepper, cornstarch, baking soda, and garlic powder. Mix everything well to ensure every piece is coated. Let this marinate for about 15 minutes. Setting it aside gives the flavors time to meld while you prepare the sauce.
Step 2: Prepare the Sauce
Grab a small bowl and whisk together the thick hoisin sauce, tamari, honey, chili garlic sauce, and water. Make sure everything is well combined; we want a smooth sauce that will cling beautifully to the steak bites later on.
Step 3: Cook the Steak Bites

Pour the prepared sauce over the steak bites, tossing to combine thoroughly. Allow it to simmer and reduce for about one minute; this will intensify the flavors and make everything extra sticky and delicious. Once done, remove the wok from the heat.
