  • In a small bowl, combine lemon zest, smoked paprika, garlic granules, oregano, cumin, onion flakes, salt, and pepper. Mix well until it forms a paste.
  • Using your hands, rub the spice mix all over the chicken. Ensure you get under the skin and inside the cavity for maximum flavor. This is where the magic happens.
  • Preheat your oven to 375°F (190°C). Place the chicken in a roasting pan. Drizzle with olive oil. Roast for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
  • Once cooked, let the chicken rest for about 15 minutes before carving. This allows the juices to redistribute, keeping the meat juicy.
