Ingredients
  

  • 8 ounces concentrated tomato puree small can
  • 1/4 cup white vinegar
  • 3 tablespoons coconut sugar or to your preference
  • 2 chipotle peppers in adobo sauce finely chopped
  • 5 –6 medium dried chili peppers rehydrated
  • 1/3 cup of reserved soaking liquid from chilies
  • 1 tablespoon hot paprika
  • 2 teaspoons crushed red pepper flakes adjust to taste
  • 1/2 teaspoon ground cumin
  • 2 teaspoons dried minced onions
  • 1 teaspoon granulated garlic

Instructions
 

  • Begin by rehydrating those dried chili peppers. Soak them in hot water for about 20 minutes until they soften. This step is crucial. If you miss this, your sauce won’t have the right texture or flavor. Drain, reserving the soaking liquid, and chop them finely.
  • In a medium bowl, combine the concentrated tomato puree, white vinegar, and coconut sugar. Mix well until the sugar completely dissolves. The sweetness from the coconut sugar will balance out the heat, making your sauce well-rounded.
  • Next, stir in the finely chopped chipotle peppers along with the rehydrated chilies. Make sure to include those reserved soaking liquids! This will enhance the overall flavor and texture of the sauce.
  • Now it’s time to add your dry spices. Incorporate hot paprika, crushed red pepper flakes, ground cumin, dried minced onions, and granulated garlic. These spices will create the heart of the Diablo Sauce. Give everything a good stir.
  • Transfer your mixture into a small saucepan over medium heat. Allow it to simmer gently for 10-15 minutes. This step helps meld the flavors together beautifully. Stir occasionally to prevent sticking.
  • Give your homemade Diablo Sauce a taste. Do you want more heat? Add a pinch of crushed red pepper flakes. Prefer it sweeter? A tad more coconut sugar may do the trick.

  • Adjust the Spice Level: If you’re sensitive to heat, start with fewer red pepper flakes and gradually increase.
  • Freshness Counts: Fresh ingredients yield a more vibrant sauce. Try to use fresh spices if possible.

  • Experiment with Ingredients: Don’t hesitate to play with other spices! A dash of smoked paprika can add a unique twist.
  • Serving Size: This recipe yields about 1.5 to 2 cups of sauce. You may want to double or halve depending on your needs.
