Equipment

  • Large bowl

Ingredients

  • 4 cups cooked chicken breast diced into bite-sized pieces
  • 1 cup red grapes halved or quartered depending on their size
  • 1 cup diced red apple
  • 1/2 cup creamy mayonnaise
  • 1 cup chopped celery
  • 1/2 cup plain Greek yogurt
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 1/2 cup toasted pecans roughly chopped

Instructions

  • Start by cooking the chicken breast. You can poach, grill, or sauté it according to your preference. Once cooled, dice it into bite-sized pieces. The chicken serves as the base of this flavorful salad.
  • While your chicken cools, wash and cut the red grapes, halving or quartering them depending on their size. Next, dice your apples and chop the celery. These ingredients provide texture, sweetness, and crunch to the salad.
  • In a bowl, combine the creamy mayonnaise, Greek yogurt, lemon juice, and honey. Mix until smooth. This dressing adds creaminess while balancing out the flavors with a hint of brightness from the lemon and sweetness from the honey.
  • In a large bowl, combine the cooled chicken, grapes, apples, and celery. Pour the creamy dressing over the top and mix gently. Make sure everything is well-coated without crushing the fruits.
  • Finally, add the toasted pecans into the bowl. They bring that required crunch and nutty flavor. Give it one last gentle fold to incorporate them.
  • For the best flavor, let the salad chill in the fridge for about 30 minutes before serving. This helps meld the flavors together beautifully.

Notes

  • Use Rotisserie Chicken: If you're in a hurry, rotisserie chicken is a great shortcut. It saves time while still offering excellent flavor.
  • Choose Crisp Apples: Varieties like Honeycrisp or Fuji will give you the best crunch and sweetness.
  • Toast Your Pecans: Toasting enhances the flavor of pecans. You can easily toast them in a dry skillet over medium heat for a few minutes.
  • Experiment with Fruits: Don’t be afraid to swap or add fruits. Blueberries or even diced oranges can add a delightful twist.
  • Dressing Consistency: Feel free to adjust the ratio of mayo to yogurt to your liking. More yogurt will give a lighter dressing.
