Arby's Chicken Bacon Swiss Recipe

Lisa Street
When you think of comfort food, what springs to mind? Maybe it's a warm bowl of pasta or a stack of pancakes on a Sunday morning. But for me, it’s the crispy, salty, and utterly delightful experience of biting into an Arby's Chicken Bacon Swiss sandwich.

  • 4 sesame seed hamburger buns
  • 4 boneless chicken breast fillets
  • 4 slices of Kraft Swiss cheese
  • 4 large lettuce leaves
  • 4 slices of fresh tomatoes
  • 8 slices of crispy cooked bacon
  • 6 –8 cups vegetable shortening or oil for frying
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 cup cold water
  • teaspoons fine salt
  • 1 teaspoon ground paprika
  • 1 teaspoon onion powder
  • 1/8 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika optional, for extra depth of flavor
  • 1/3 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon buttermilk
  • 1 teaspoon granulated sugar
  • teaspoons white vinegar
  • 1/4 teaspoon freshly squeezed lemon juice
  • 1/8 teaspoon fine salt
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon dried parsley flakes
  • 1 dash garlic powder
  • 1 dash ground black pepper
  • 1 dash dried dill weed
  • 1/4 teaspoon Worcestershire sauce optional, for added tang and depth
  • 1/2 teaspoon unflavored gelatin dissolved
  • 2 teaspoons hot water

Instructions

  • First, take the boneless chicken breast fillets and flatten them slightly for even cooking. You can use a mallet or a heavy dish for this. Then, season both sides with fine salt and ground paprika. This will lay the foundation for a flavorful bite.
  • In a bowl, mix the all-purpose flour, onion powder, garlic powder, and smoked paprika (if using). In another bowl, whisk the egg and then stir in the cold water. Combine the two mixtures until smooth. This batter is what will give the chicken that crispy exterior.
  • In a large pan, heat 6–8 cups of vegetable shortening or oil over medium-high heat. You’ll know it’s ready when a small drop of batter sizzles when added to the oil. Always exercise caution, as hot oil can be quite tricky.
  • Dip the seasoned chicken in the batter, allowing any excess to drip off. Carefully place it in the hot oil. Fry for about 4–5 minutes on each side or until the chicken is golden brown and cooked through. It’s helpful to check with a meat thermometer; aim for 165°F (75°C).
  • Once the chicken is cooked, let it briefly rest on a paper towel to drain excess oil. Now it's time to assemble. Take a sesame seed bun, place one large lettuce leaf, followed by the fried chicken, crispy bacon, and Swiss cheese. Add fresh tomato slices on top. Finish with the top bun.
  • Combine all the dressing ingredients in a bowl. Whisk until smooth. You’ll want this for a tasty drizzle on top or as a dip on the side.

Notes

  • Pat the Chicken Dry: Before frying, ensure that the chicken breasts are dry. This helps the batter adhere better.
  • Use a Thermometer: Cooking oil temperature can be tricky. A thermometer helps prevent overcooking or undercooking.
  • Crispiness Factor: For extra crunch, you can double-dip the chicken in the batter. This gives it that nice, crispy texture.
  • Don’t Rush the Rest: Let the fried chicken cool a bit before assembling. It locks in moisture and flavor.
  • Slicing Fresh Veggies: Use ripe, fresh vegetables for maximum flavor. They add vital freshness to the sandwich.
