Equipment

  • Medium saucepan

Ingredients

  • 1 cup 8 ounces unsalted butter
  • 1 ⅓ cups hot sauce such as Frank’s or Crystal, or your preferred variety
  • 2 teaspoons garlic powder or garlic granules for a stronger flavor
  • 1 to 3 teaspoons honey optional, adjust to your preferred sweetness
  • 1/4 teaspoon smoked paprika for an extra smoky note, optional
  • Pinch of cayenne pepper optional, to increase the heat

Instructions

  • Start by collecting all your ingredients. It’s always easier to have everything at arm's reach before you get started. Measure out your hot sauce, honey, garlic powder, and any optional spices you plan to use.
  • In a medium saucepan over medium heat, add the unsalted butter. Stir occasionally until it melts completely. Keep an eye on it to prevent any burning. We want smooth melted butter, not browned.
  • Once the butter has melted, it’s time to add the hot sauce. Pour in your chosen hot sauce slowly and stir as you do. The mixture should start coming together and form a beautiful, vibrant orange color.
  • Now add the garlic powder, and if you opted for them, the honey, smoked paprika, and cayenne pepper. Stir well until all the ingredients are fully combined. This sauce should smell amazing!
  • Here’s where the magic happens. Take a small taste of your sauce. Does it have enough heat? Too much? Is it sweet enough for your liking? Adjust the honey or add more hot sauce until it’s perfect for your palette.
  • Once you’re happy with the flavor, remove the saucepan from heat and let it cool. Once cooled, transfer your homemade buffalo sauce into a jar or airtight container. It’s ready to be used!

Notes

  • Use quality hot sauce: The type of hot sauce you use dramatically impacts the flavor, so choose one you love.
  • Balance the sweetness: Adjust the honey to find the sweet-heat combination that suits your taste.
  • Make a big batch: This recipe is perfect for doubling. Keep extra sauce on hand; trust me, it’ll disappear fast!
  • Reheat gently: If you store leftovers, gently reheat on low heat to avoid separating the ingredients.
  • Experiment with spices: Play around with other spices like onion powder or even a splash of vinegar for tang.
