Equipment

  •  Bowl, Air Fryer

Ingredients

  • 1 tablespoon olive oil – This adds moisture and helps the spices adhere.
  • ½ tablespoon dry turkey or poultry seasoning – I personally used Bell’s since it has no salt. It’s a fantastic blend of herbs.
  • 1 teaspoon garlic powder – For that savory kick.
  • 1 teaspoon lemon zest – A dash of brightness to counterbalance the rich turkey.
  • 2 teaspoons kosher salt – Essential for enhancing all the flavors.
  • 4- pound turkey breast – Bone-in with skin which keeps the meat juicy and flavorful.

Instructions

Step 1: Prepare the Turkey Breast

  • Start by taking your turkey breast out of the packaging. Pat it dry with paper towels. Drying the surface helps achieve that much-coveted crispy skin. Do this gently; you want to preserve the structure.

Step 2: Season the Turkey

  • In a small bowl, combine the olive oil, poultry seasoning, garlic powder, lemon zest, and kosher salt. Mix until it forms a paste. Rub this mixture all over the turkey breast. Make sure to get under the skin too; this step is crucial for flavor.

Step 3: Preheat the Air Fryer

  • Set your air fryer to preheat at 350°F. Preheating allows for even cooking right from the start, giving a great texture.

Step 4: Cook the Turkey

  • Place the seasoned turkey breast in the air fryer basket, skin side up. Cook it at 350°F for about 30 to 40 minutes, or until the internal temperature reaches 165°F. Use a meat thermometer for accuracy.

Step 5: Let It Rest

  • Once cooked, transfer the turkey breast to a cutting board. Cover it loosely with aluminum foil and let it rest for 10 minutes. Resting helps redistribute the juices, keeping the meat moist and tender.

Notes

  • Use a meat thermometer: This ensures your turkey is cooked perfectly without overdoing it. Aim for 165°F in the thickest part of the breast.
  • Don’t skip the resting period: After cooking, the turkey needs time to rest. Cutting it too soon means risking a dry bird.
  • Experiment with spices: The beauty of this recipe lies in its flexibility—experiment with your favorite herbs and spices. Try adding smoked paprika or thyme for a twist.
  • Air fry in batches: If your air fryer isn’t big enough, consider cooking smaller pieces. You want them to have space for optimal airflow.
  • Use skin-on breast: Cooking skin-on helps retain moisture and adds an unbeatable flavor. Plus, crispy skin is always a win!
